All About The Internet’s Favorite Dessert: Brookie Brownies

Since June 2013, consumers have flooded Google to search for 'brookie' and 'brookie recipes', increasing the search volume by over 700%. The brookie is a marriage between two quintessential comfort desserts — a fudgy chocolate brownie and a classic chocolate chip cookie — that has gained massive popularity online in the last decade. We were inspired to create a collection of gourmet brookies that delivered the same comforting flavor and textures familiar to consumers but with premium ingredients. 

"One of the things we pride ourselves on is taking this perfect combination of a brownie and a cookie and doing it like nobody else does," Chimene Mayne-Ross, President of Killer Brownie®, said. "Neither of the flavors overshadows the other. You get the experience of a great cookie AND a great brownie all in one!" 

In this blog, we'll explore our takes on the popular brownie/cookie confection and the challenges we've faced to perfect the art of the Killer Brownie® Brookie.  

The Art of the Brookie 

"What's challenging about a brookie is that a cookie and a brownie are scientifically different," Chimene explained. "So the challenge is to [preserve] both of those textures that you remember and love in the final product."  

Keeping the brookie look and feel is the most important part of producing the perfect Killer Brownie® brookie. In the early R&D stages, each batch of a potential brookie is tested and scrutinized because achieving the perfect brookie requires a flexible process, meticulous attention to ingredients, and a touch of culinary artistry.  

 "[In this process,] you have to look at the weather outside, and you have to look at the temperature of every single thing going into the product," Sarah Mooney, Senior Product Development Specialist, said. "[The challenge lies in] keeping the layers from separating after they're done baking." 

It's a delightful process of refinement, ensuring that each brookie meets our high-quality standards.  

Sarah recalled the process, saying, "I'll bake the product, and then [the team will] come together and ask, 'Okay, how do we want to change this?'" 

Small changes, like an inclusion in the brownie or cookie, can greatly affect the final product. Ingredients can impact baking time and temperature, so the process for the Brookie Fudge Brownie, with its golden top and fudgy base, could be wildly different from baking a Peanut Butter Brookie, which has a peanut butter cookie top folded with roasted peanuts. Balancing baking science and creative ideas is a skill our team excels at, resulting in five different gourmet brookies and another coming soon! 

 Meet the Brookie Collection  

Cookie Dough Killer Brownie® 

The star of Killer Brownie's® Brookie Collection is the Cookie Dough Killer Brownie, a bestseller of our signature brownies. Unlike our other brookies, which have two layers, the brownie base and cookie top, the Cookie Dough features three distinct layers. The bottom is a rich chocolate brownie. It's layered with a blanket of creamy caramel and chocolate chips and topped with golden chocolate chip cookie dough.  

"The very first time I tried a brookie was the Cookie Dough Killer Brownie®," Chimene recalled. "And I remember thinking [it was] the most amazing thing I've ever eaten in my life!" 

Brookie Fudge Brownie 

The Brookie Fudge Brownie is our best-selling product across the board. As our classic brookie flavor, this brownie features a golden chocolate chip cookie baked atop a rich chocolate chip fudge brownie. 

Little Brookie 

The Little Brookie is a thinner version of the Brookie Fudge. It packs the same flavor but is set at a lower price point. It has thin layers of moist fudge brownie and golden cookie topped with chocolate chips and baked to perfection.   

Peanut Butter Brookie 

We also offer two seasonal brookies for summer, including the Peanut Butter Brookie. It has a sweet and salty flavor, featuring a peanut butter cookie with roasted peanuts folded in, baked atop a rich chocolate chip fudge brownie, and finished with a hint of sea salt. 

S'mores Brookie 

A long-awaited product in this collection is the S'mores Brookie. Though it's still in development, this brookie has been a dream to work on, and we're so excited to offer it to customers in the near future. 

Brookie Innovation & Collaboration 

We love working one-on-one with customers to build a program that best fits their needs. To reach your goals, we can create something unique. For example, the Little Brookie was created for a customer by modifying the recipe of the Brookie Fudge. The customer wanted the brownie/cookie combination, but they wanted it to be the same weight as a traditional brownie.  

"The challenge was [trying to achieve] the same experience while reducing both the deposits by 40% and still getting that cookie doneness and true brownie texture," Chimene explained.  

After many brownie drafts and experimentations, we scaled the recipe down and created an end product that preserved the cookie and brownie flavor profiles. We were able to offer this product at the price point and application the customer needed for their stores.
